“Paleo Crunch” aka “Paleo Crack”

Dry ingredients:

1/2 cup raw pumpkin seeds

1/2 cup raw sunflower seeds

1 cup almond meal

1 cup shredded coconut

2 cups raw slivered or chopped almonds

Wet ingredients:

1/2 cup coconut oil

1/2 cup raw honey

1-2 teaspoons vanilla

Preheat oven to 325.  In large bowl, add dry ingredients.  Add wet ingredients and combine well.  Spread thin layer on baking pan and bake for 25 minutes.  Stir and bake another 5 minutes or until golden brown.  Cool 5-10 minutes in pan.  Make sure to run a spatula under the ingredients after you get it out of the oven the final time before it cools.  If not, it will stick.

This is great by itself or put it in some almond milk and it is similar to a granola type of cereal.  Good stuff!
